Het zijn van oorsprong rieten of rotan mandjes die op een vakkundige manier gevlochten zijn. Tegenwoordig worden ze ook van hout of plastic gemaakt, maar een echt rieten rijsmandje blijft de beste keuze. De mandjes hebben uiteenlopende vormen. Zo kun je voor een rond model kiezen, maar ook voor langwerpig of ovaal gaan. Vooral bij zuurdesembrood is het verstandig om dat in een mandje te doen. Dit deeg is een stuk natter en minder stevig dan dat van normaal brood. Wil je er dus voor zorgen dat je brood uiteindelijk een mooie vorm krijgt? Dan moet je het deeg ondersteunen tijdens het rijsproces. Dat doe je door het deeg te vormen en vervolgens in een rijsmandje te leggen. Tijdens het rijzen volgt het deeg de vorm van dit mandje, met een mooie ronde of ovale vorm als resultaat.<\/p><p>Waarom gebruik je een speciaal rijsmandje en geen simpele kom? Omdat je deeg zuurstof nodig heeft om te blijven rijzen. Een rieten mandje is nooit helemaal luchtdicht. Hierdoor kan er makkelijk zuurstof bij het deeg komen, voor een mooie rijs. Je ziet ook makkelijker hoeveel het deeg gerezen is. Een rijsmandje bestaat namelijk uit verschillende laagjes. Je kunt makkelijk aflezen bij welk laagje het deeg begonnen is en na verloop van tijd leren bij welk laagje het voldoende gerezen is.<\/p><p>Een van de redenen om je eigen brood te bakken, is om een mooi design in het deeg te kunnen snijden. Een rijsmandje maakt dat ook makkelijker. Het natuurlijke materiaal absorbeert vocht uit het deeg. Hierdoor is de buitenkant net wat droger. Zorg ervoor dat je hem goed afdroogt. Laat het mandje desnoods even 24 uur drogen voordat je hem gaat gebruiken. Vervolgens bestrooi je het mandje met bloem. Zorg ervoor dat er overal een mooi, gelijkmatig laagje bloem zit. Vergeet niet om ook de ruimtes tussen de verschillende laagjes riet goed te bedekken. Het vochtige deeg zorgt er namelijk voor dat het tarwebloem gluten gaat ontwikkelen en daardoor plakkerig wordt. Gebruik daarom roggebloem. Dit is glutenvrij, waardoor het niet gaat plakken. Een pluspunt is dat roggebloem ook nog een hele rijke, diepe smaak aan je brood geeft.<\/p>\n\n<p>Je gebruikt je rijsmandje voor de eindrijs van je brood. Je hebt het deeg dus al een keer buiten het mandje laten rijzen. Vervolgens breng je het in vorm door het deeg op te bollen of lang te maken. De vorm die je kiest, is afhankelijk van de vorm van je rijsmandje. Een rond mandje vraagt om een rond brood, terwijl een langwerpig mandje om een lang brood vraagt. Zorg ervoor dat de \u201cnaad\u201d van het deeg naar boven wijst. Na de eindrijs ga je je deeg namelijk omkiepen op een stuk bakpapier. Zo eindigt de naad uiteindelijk aan de onderkant.
